Refrigeration is Best (Especially in Australian Summer)
While SMBC can technically sit at room temperature for 1-2 days in cool, low-humidity environments, I always recommend refrigeration for cakes, particularly during our warmer months from November through March. This is crucial for SMBC cakes: remove your cake from the fridge 1-3 hours before serving, depending on size:
6-inch cake: 1 hour
8-inch cake: 1.5-2 hours
10-inch or tiered cakes: 2-3 hours
Cold SMBC firms up and loses its silky texture, but at room temperature, it transforms into that perfectly smooth, melt-in-your-mouth frosting. The cake itself also tastes better at room temperature - the flavours come alive and the texture softens beautifully.

Where in the Fridge?

Here's my secret for clean, beautiful slices: dip a long serrated knife in hot water, wipe it dry, and cut your slice in one smooth motion. Dip the knife in hot water again between each slice.
